Simple casserole ideas

Winter is in the air and that's when I tend to make casseroles and with having my second job I suspect that I will make them even more frequently.

What are your favorite simple casseroles recipes? By simple I just mean I don't want to have to brown anything or use multiple pots- that's not my idea of a casserole.

My go to is layering:

cut chicken breast

quinoa

a ton of spinach

feta

add a lot of lemon juice, garlic, water and a few pats of butter. Bake, top with a bit of shredded mozzarella a few minutes before taking out of the oven.

by Anonymousreply 72October 15, 2024 11:33 PM

Oh God that sounds good,.OP.

by Anonymousreply 1October 13, 2024 8:33 PM

It was, I had it for dinner and made enough for between jobs tomorrow!

by Anonymousreply 2October 13, 2024 8:35 PM

The quinoa is already cooked?

by Anonymousreply 3October 13, 2024 8:52 PM

r3, no.

by Anonymousreply 4October 13, 2024 9:05 PM

Not exactly simple but I love Love LOVE a good shepherd's pie when the cold northern weather comes in. You can go foofy culinary with it (chopping fresh produce, etc) but the quick n' easy recipes out there are still tasty. Here's one.

I'm also into chicken veg noodle casserole, basically tuna noodle casserole with the gravy and curly egg noodles, but swap in chicken breast cooked tender. And adding more veggies and sliced mushrooms. Lasts for days in the fridge and doesn't stink up the joint at work like reheated tuna casserole does.

by Anonymousreply 10October 13, 2024 9:18 PM

Love this. I hadn't had tuna casserole in... 40 years or so. A few months ago I had a sudden urge for it. I didn't know how to make it but I just used shell pasta, canned tuna, frozen peas (added close to the end of cooking), parmesan, canned cream of mushroom soup and chives. I can't tell you how satisfying it was although the idea of it kimd of turned my stomach later weirdly.

by Anonymousreply 11October 13, 2024 9:32 PM

Did you smell it?

by Anonymousreply 12October 13, 2024 9:37 PM

Hamburger helper with a can of mushrooms and a can of peas

by Anonymousreply 13October 13, 2024 9:38 PM

No hamburger?

by Anonymousreply 14October 13, 2024 9:40 PM

Yes hamburger fool!

by Anonymousreply 15October 13, 2024 9:52 PM

There is an easy chicken casserole recipe on the back of the box of Stove Top stuffing. I made it last night.

by Anonymousreply 16October 13, 2024 9:53 PM

r12, that may be what it was!

by Anonymousreply 17October 13, 2024 9:53 PM

Cook 2 lbs ground beef in pan, remove oil with strainer or paper towel, add to large bowl. Cook one onion chopped finely in a tsp or two of oil until soft, add to the bowl. Add 2 cans of tomato soup, 1Tbsp of ketchup, 1 tsp salt, 1/2 tsp pepper, 1 cup frozen corn. Mix well. Boil 2 cups of flat egg noodles in salted water until mostly cooked. Add to bowl. Mix for a minute or two. Place in a casserole. Top with grated cheddar cheese. Bake in a 350 degree oven until cheese is slightly browned. Let sit until cool enough to eat and dish it out.

by Anonymousreply 18October 13, 2024 10:03 PM

^She doesn't want to have to brown ground meat, you heartless fool.

by Anonymousreply 19October 13, 2024 10:07 PM

Oh, missed that part. Whoops.

by Anonymousreply 20October 13, 2024 10:24 PM

Hi, OP! A healthy and filling casserole I like is sweet potato casserole. Just bake 4-5 red garnet sweet potatoes until they're soft; peel off the jackets and mash the potatoes; add walnuts, raisins, a bit of salt, brown sugar, and cinnamon, then top with a layer of plant-based cheese, such as Viola Cheddar. Bake another 5 minutes until the cheese melts. Let cool for 5 minutes.

It's pretty good and will make about 5 servings.

by Anonymousreply 21October 13, 2024 10:31 PM

r21, that sounds delicious and I will likely make it but will substitute cream cheese for the plant based cheese.

by Anonymousreply 22October 13, 2024 10:37 PM

You lost me at plant-based cheese, R21, but obviously I could use the real thing.

by Anonymousreply 23October 13, 2024 10:42 PM

Here's the simplest Ratatouille I can find, made on a sheet pan. The recipe doesn't mention it, but I add chopped mint leaves and feta cheese.

R7 Let me check and see if I have any Bayou Blast Essence in the house. I might be out of mirlitons.

by Anonymousreply 25October 13, 2024 11:11 PM

R24 That ain't no casserole cupcake.

by Anonymousreply 26October 13, 2024 11:14 PM

Stupid r25 --

Bayou Blast = Cajun seasoning in any grocery.

Mirliton = in any grocery sold as "chayote squash."

by Anonymousreply 27October 13, 2024 11:17 PM

R27 It's a thread about simple casserole ideas.

You are plugging Emeril's Bayou Blast Essence and Emeril's Kick It Up! Red Pepper Sauce. Seriously?

Emeril is disgusting.

by Anonymousreply 28October 14, 2024 12:00 AM

R27 I know what a tryout squash is. You're using the most obscure term you can find why

by Anonymousreply 29October 14, 2024 12:19 AM

The Tim Walz brat casserole is great. You have to brown the brats.

by Anonymousreply 30October 14, 2024 12:23 AM

[quote] Yes hamburger fool!

Somebody ran out of commas.

by Anonymousreply 31October 14, 2024 12:25 AM

This is easy and tasty. I add frozen peas and a small jar of sliced mushrooms.

Rescue Chick, seems like the quinoa would need a lot of cooking and a pre-soak, at least. I'm surprised you put it in, uncooked / dry. It also needs rinsing, too, right? Anyway, I'll defer to your judgment on this.

by Anonymousreply 33October 14, 2024 12:40 AM

there is water and lemon juice in it and the spinach and chicken both have moisture. I don't rinse the quinoa (I didn't know you were supposed to when I first cooked it and now I don't care that much). the quinoa takes as long as the chicken breast does to cook.

by Anonymousreply 34October 14, 2024 12:47 AM

Chicken Divan, y’all! And don’t try to swap in lite mayonnaise or you’ll make the baby Jeebus cry 😢

by Anonymousreply 35October 14, 2024 12:55 AM

Casseroles seem more trouble than they’re worth. How about just making a tray of nachos under the broiler?

by Anonymousreply 36October 14, 2024 12:56 AM

Because they’re crunchy i.e. gross?

by Anonymousreply 37October 14, 2024 12:57 AM

Does anyone have any casserole recipes that use liver and fava beans?

by Anonymousreply 38October 14, 2024 1:42 AM

Baked potatoes au grautin. I can eat those anytime.

by Anonymousreply 39October 14, 2024 1:50 AM

Yum, a good casserole IMO is one with some tasty boneless chicken thighs, potatoes, carrots, mushrooms, and some good wine, gravy and butter as ingredients. :)

by Anonymousreply 40October 14, 2024 2:03 AM

Quiche is pretty easy, esp. with a premade pie crust. Eggs, lots of cheese, etc.

by Anonymousreply 41October 14, 2024 4:46 AM

Tuna casserole, with noodles, peas, mushrooms, egg noodles, mushroom soup and breadcrumbs.

by Anonymousreply 42October 14, 2024 5:23 AM

R41, Agreed. My brother has learned to make quiche using pre-made pie shells.

by Anonymousreply 43October 14, 2024 5:45 AM

R41 R 43 A quiche is not a casserole.

by Anonymousreply 44October 14, 2024 5:58 AM

I followed this recipe to a T a couple months ago and it was OUT OF THIS WORLD amazing. It uses shredded rotisserie chicken and pre-made puff pastry/pie crust to cut down on time. If you have an air fryer to pop it into instead of the oven the whole thing takes under an hour, prep to finish.

FYI, I just laid the whole puff pastry over top instead of that bizarre patchwork deal because...who would want less puff pastry when then there is an option for more puff pastry?

by Anonymousreply 45October 14, 2024 8:22 AM

Yum. I’m going to try that, R45!

by Anonymousreply 46October 14, 2024 11:04 AM

Make way foe Connie Casserole!

by Anonymousreply 47October 14, 2024 11:09 AM

[quote]You're using the most obscure term you can find why

I'm not the poster you're addressing but that's the term the recipe used. Mirliton is what they're called in Louisiana, but the recipe also tells you "chayote" in parentheses. It's not that difficult.

by Anonymousreply 48October 14, 2024 11:30 AM

Yes to the pot pie, quiche and tuna casserole. Everything else is a maybe since I didn't grow up with casseoles or hot dishes. I suggest lasagna, chicken enchiladas with green chile or mole sauce, mousaka, pastitsio, strata for brunch and baked ziti. Portion individually and vacuum seal.

by Anonymousreply 49October 14, 2024 11:51 AM

earrings

caftans

gin

regret

by Anonymousreply 50October 14, 2024 12:35 PM

R45, that recipe calls for rotisserie chicken which is then cooked for another 35 minutes. Overcooked much?

by Anonymousreply 51October 14, 2024 1:09 PM

campbells soup

by Anonymousreply 52October 14, 2024 1:27 PM

Can I substitute Emeril's Bayou Bumfuck! Spicy Saucy Secret Liquid Merliton Puree?

by Anonymousreply 53October 14, 2024 2:48 PM

I’d like a bit more info about OP’s recipe.

by Anonymousreply 54October 14, 2024 3:12 PM

Spicy sweat sauce my ass!

by Anonymousreply 55October 14, 2024 3:26 PM

Isn’t there sandy grit in the unrinsed and uncooked quinoa?

by Anonymousreply 56October 14, 2024 3:43 PM

Greek Lemon Chicken and Potatoes by Chef John of Food Wishes.

Quick, easy, delicious. I've made this many, many times.

Cut up chicken, potatoes, chicken broth, lemon juice, olive oil, garlic, seasoning.

Maybe not technically a "casserole"...

r54, what additional info?

r56, not that I have ever noticed

by Anonymousreply 58October 14, 2024 4:09 PM

I'm amazed that after all the wind and rain we had the fall foliage has hung on. It's at peak now and gorgeous.

by Anonymousreply 59October 14, 2024 4:19 PM

In the 70s my mom used to take a box of Uncle Ben's wild rice and pour it uncooked into a casserole dish, top with pieces of chicken (bone in) and dump a can of Campbell's cream of mushroom soup over it and bake it for an hour. We had that at least once a week when she was working full time and getting her master's degree. Also lots of beef stew and pot roast in the crockpot but you have to brown the meat for that. Although it literally takes a couple of minutes.

Most casseroles are so unhealthy and loaded with sodium but OPs sounds good (I would skip the cheese).

by Anonymousreply 60October 14, 2024 4:22 PM

One of my go to recipes. Super easy and healthy. I use brown rice and top with sour cream.

by Anonymousreply 61October 14, 2024 5:07 PM

R51 It's not at all, as it's suspended in buttery gravy the whole time it's being cooked. And anyway, chicken pot pie is always popped into the oven to brown with already cooked chicken inside. Did you think it was assembled with raw chicken?

by Anonymousreply 62October 14, 2024 5:30 PM

R48 Mirliton is local idiom, not in some standard dictionaries.

Offsite Link
by Anonymousreply 63October 14, 2024 7:47 PM

r63 And we pronounce it mella-ton which produced no results when I tried to google it the first time.

by Anonymousreply 64October 14, 2024 7:52 PM

That mirliton-shrimp casserole is delicious, trust!

by Anonymousreply 65October 14, 2024 7:54 PM

Rescue Chick do you use a slow cooker/Crock pot at all?

by Anonymousreply 66October 14, 2024 7:57 PM

r66, yes! absolutely! I make stews and soups in it.

by Anonymousreply 67October 14, 2024 9:03 PM

Instant Pot beef stew requires very little fussing and you can sear the beef in the same pot you can cook the stew.

My preference for the chicken pot pie would be to poach boneless organic chicken breasts because the quality of rotisserie chicken is so variable. You just heat them slowly in chicken stock or butter. The chicken is much more tender.

Was pleased to see no use of Campbell soup in the pot pie.

by Anonymousreply 68October 14, 2024 11:08 PM

I'm telling you NOW so I don't have to tell you THEN that I don't want to brown any meats, you heartless fool.

by Anonymousreply 69October 15, 2024 9:32 PM

I'm liking Mulva's beef-rice-cabbage recipe at R61.

by Anonymousreply 70October 15, 2024 9:38 PM

R69 Does this really matter? Does this make any difference? I've always wondered.

by Anonymousreply 71October 15, 2024 11:16 PM

It does. Browning equals flavor.
